Back while I was in college, I obtained this recipe from a friend’s mother. Well, a Thai friend, of course!
It’s also one of the rare recipes that I haven’t altered in any way. I typically can’t resist, especially when it comes to well-known chefs’ recipes. However, this one is flawless as is. It really is the same as what you receive in Thai restaurants as well as Thai streets!
Okra with Pan-Roasted Shrimp:

Ingredients
Large fresh shrimp, peeled and deveined, weighing 1 1/4 pounds
Half a teaspoon of kosher salt
Eight ounces of fresh okra, halved lengthwise, and two and a half teaspoons of Cajun seasoning divided among three tablespoons of canola oil
One pint of cherry tomatoes, or roughly two cups or ten ounces
One and a half teaspoons of freshly squeezed lemon juice
Fresh parsley, chopped (optional)
Method
Preheat a large cast-iron pan
Preheat a large cast-iron pan over a medium-high flame for two minutes, then season the shrimp. In the meantime, use paper towels to pat the shellfish dry before tossing them with one and a half teaspoons of Cajun seasoning and salt. Set them aside. Cook the okra:
To cook the okra, add 1/2 teaspoon of Cajun seasoning, 1 tablespoon of oil, and the okra to a heated skillet. Simmer for 4 to 5 minutes, stirring periodically, or until the vegetable is soft and has some charring. Move to a platter.
Cook the tomato:
Cook the tomatoes by adding 1/2 teaspoon of Cajun seasoning, the tomatoes themselves, and 1 tablespoon of oil to a heated skillet. Simmer for approximately three minutes, stirring now and again, or until the tomatoes start to burst and blister. Shift onto an other plate.
Cook Shrimp to cook and serve
Add the remaining one tablespoon of oil to the heated skillet along with the shrimp to cook and serve. Cook for 3 to 4 minutes, stirring frequently, or until pink and opaque.
After adding the okra and stirring to mix, return the tomato mixture to the skillet along with the lemon juice. If desired, garnish with parsley.
Keep leftovers in the refrigerator for up to three days in an airtight container. Warm the food thoroughly by gently reheating it on your stove or using a 50% power microwave.
