As a child, I seem to have eaten this multiple times a month. It resembles a hearty breakfast hash made of potatoes, ham, or bacon, mixed with eggs, onions, and bell peppers. It’s a substantial dish, and it seems like just the kind of breakfast a German farmer would have.

Ingredients:

There’s a good reason why German Farmers Breakfast Bauernfrühstuck was and continues to be so popular: it tastes great, is simple to make, and uses items you probably already have in your kitchen. If the aroma of onions and potatoes frying in some oil isn’t enough to persuade you, the addition of eggs and cheese should. Though they can use any herbs you have on hand, my favorites are rosemary and basil (I think rosemary is the finest herb for potatoes).

Let Start:

 3 large potatoes, cut in quarters lengthwise and peeled

3 tablespoons of extremely virgin olive oil or bacon grease

2 cups of finely chopped onions, both green and white (chopping the greens too)

2 cups coarsely sliced bell peppers

Add salt to taste

1/4 cup minced parsley

1-2 cups sliced ham,

 4 whisked eggs

Procedure:

Boil the potatoes. until barely cooked, about 10 to 15 minutes in a pot of water that is lightly salted (test for doneness). To cool down, drain and rinse with cold water.

Trim to make 1-inch squares. Put aside.

Brown the bell peppers and onions:

In a large skillet, heat 2 tablespoons of bacon grease (or olive oil) over medium-high heat. Add the chopped bell peppers and onions. Turn up the heat too high. For two to three minutes, while tossing regularly, brown the onion and bell peppers.

After adding the potatoes, add the ham.

After pushing the veggies to the other side within the pan, add the sweet potatoes along with another tablespoon of olive oil or bacon fat.

Stirring constantly, brown the potato flesh for about two minutes. As you cook, add salt to taste.

Stir the ham into the potatoes and simmer for one to two minutes, stirring often, until the ham is thoroughly heated.

Stir in the eggs and parsley after combining all the veggies, ham, and potato. Pour in the eggs and whisk to evenly distribute them throughout the ham and veggies.

Remove the eggs from the heat as soon as they start to firm up.

Instructions:

Cook bacon in a pan over low heat until crisp. Transfer to a paper towel. Add potatoes, onion, green pepper, and salt and pepper, reserving 2 tablespoons of the drippings. Potatoes should be cooked and stirred over a medium flame until golden brown.

Add the eggs and milk, then heat and stir for about two minutes, or until the eggs are almost set.

Turn down the heat. When the eggs are set and the cheese and bacon are well cooked, mix them gently.

Serve right away.

The leftovers taste even better the next day. Delicious when rolled up in a flour tortillas for an on-the-go breakfast burrito.

Serves four to six.
